Oto Mboro (Unripe Banana Pottage) Recipe

Oto Mboro (Unripe banana pottage ) is a delicacy native to the Efik and Ibibio tribes of Cross River and Akwa Ibom states of South-South Nigeria.

It is made with grated or pureed unripe bananas and vegetables. Oto Mboro is great for nursing mothers and is an ideal healthy weaning meal for babies.

They are made with bananas which are good sources of potassium, vitamin B6, vitamin C, and fiber.

Ingredients

  • 5 unripe bananas
  • ¼ cup palm oil
  • 5 cups water
  • 2 crushed garlic cloves
  • 3 seasoning cubes
  • 1 tbsp. dried pepper (use fresh pepper if you have)
  • 1 tsp. salt or add to taste
  • 1 tbsp. crayfish
  • 1/2 onion, chopped
  • scent leaf
  • Periwinkles
  • Stockfish

Preparation

1. Grate and peel your bananas into a smooth consistency (you can use a food processor (blender) in place of a grater.

2. Chop off the sharp edges of the periwinkles, wash, and boil for 5 minutes with a little salt to remove dirt and keep aside.

3. Wash, season, and boil meat and stock fish for 20 minutes.

4. Add crayfish, seasoning, onion, pepper,  periwinkles, pepper, and salt and allow to boil.

5. Add your grated banana using a spoon or using your hands like you are adding it like balls. Do not stir just cover and allow to boil for 10 minutes.

6. Pour in your stock fish and meat, stir, and allow it to simmer on medium heat.

7. Add your scent leaf, stir, and allow to cook for about 5 minutes.

8.  Serve hot.
